Wow, I'm having such a wonderful time here at the Optimum Health Institute. It's a lot of work, both physically and spiritually, but I feel like I'm really thriving.
Along the way, I've picked up some great raw recipes. Here's one that I've made a few times, and it's one that would be familiar to raw fooders, but it bears repeating!
Raw Seed Cheese
2 cups hulled sunflower seeds
1 cup unhulled sesame seeds
3 1/2 rejuvelac or 3 1/2 cups purified water ("Rejuvelac" is the lightly fermented seed soak water)
Soak sunflower seeds overnight in water. Soak sesame seeds one hour before preparation. Rinse seeds. Place all ingredients in your Vitamix blender. Blend for about 1 minute, pulsating. Pour mixture into sieve and place over container to catch liquid and cover with a plate, set on counter for 6 to 8 hours, then place in refrigerator overnight.
If you like, you may season with all variety of flavors. I like to add a pinch of sea salt, fresh chopped herbs add wonder, curry powder, garlic, onion powder... whatever makes you happy.
This food is full of enzymes, B vitamins, and amino acids. It is a pre-digested protein, so it is easily assimilated into the system. Seed cheese is one of my most favorite foods, great with salad, steam veggies and straight up on its own. I love this food, fills you up and gives you plenty of energy.

Synergistic Food Pairs
Here are three food pairs that create more nutrition together than they do apart.
Olive Oil with Tomatoes
New research (Free Radical Biology & Medicine) reveals that eating various types of tomato products with olive oil or sunflower oil increases available lycopene. Lycopene helps to lower chances of lung ailments, breast cancer & heart ailments.
Greens with Beans
The presence of Vitamin C in greens helps to activate the iron present in beans, and this combo allows much better assimilation of both iron and Vitamin C.
Garlic or Onions with Whole Grains
Recent research published in the Journal of Agricultural & Food Chemistry stated that the combination of onions or garlic along with whole grains seems to help the assimilation of zinc as well as iron. Sulphur compounds in garlic, particularly, generally boost assimilation of minerals.
